Well grilling season is under way, and there is nothing better than the smell and taste of grill vegetables.  In particular grilled Portabellas. 

Portabella mushrooms are the largest mushrooms, they have a tan/brown cap.  Their taste is a deep meat like flavor they can be the main entrée or side served as a side dish. 

Portabellas can be purchased individually, or in wrapped trays whole and sliced.  Be sure to keep them refrigerated, and best in brown paper bags not plastic.  In preparing your portabellas start by  rinsing off or wiping the portabellas with a damp towel.  Remove the stem, if still attached.     

Taking a closer look at grilling the Portabella as a burger is a great and easy way to enjoy it’s flavor, and lets you grill along other vegetables to top your mushroom with.  Grilling your vegetables brings out beautiful flavors and smells don’t limit yourself with what Veggies you can put on your plate from the grill.

1 All Seasons Portabella mushroom
1 tbsp olive oil
garlic, chopped
1 pinch rosemary
1 vine ripe tomato
2 slices oka cheese
1 multigrain kaiser bun
1 tbsp pesto mayonnaise
1 head butter lettuce
1 red onion


Remove stem from portabella mushroom, sauté in skillet with 1 tbsp olive oil, chopped garlic, pinch of rosemary, remove from skillet and place onto a baking sheet gill side up.
Quickly sauté two slices of vine ripened tomato in same skillet, and place on top of mushroom.
Top tomato with 2 slices of oka cheese and bake at 350 degrees until cheese is bubbling, approx 5 – 7 min.
Toast Kaiser bun and spread with pesto mayonnaise.
Top bun with lettuce and a slice of red onion.
Finish with portabella burger.
